• Vinification: Picked on taste in conjunction with grape analysis. Tend to pick on the early side to promote the citrus/tropical flavors and retain the natural acids. The juice is cold settled and racked to stainless steel tanks for fermentation, a portion of which is fermented and aged on French and American oak.
