The vinification of the three varieties is carried out separately, with a traditional maceration of 30 days, using the techniques of pisage and delestage. Malolactic fermentation occurs at 100%. The aging in French oak barrels is carried out in two stages, during the first 12 months each variety separately, then the nest blend returns to barrels for six more months, thus completing the 18 months of aging having, finally, 6 months of aging in the bottle.
